Winemaking Process
A wine produced by the Luis Cañas winery using the traditional carbonic maceration technique. The label has been redesigned, and now it looks fresher and more elegant.
The destemmed, uncrushed bunches of grapes are fermented in a carbon dioxide rich environment, so that the juice ferments while it is still inside the grape. The weight of the upper grapes naturally crushes those at the bottom, which thus undergo traditional fermentation.
After 12 days, the process continues with frequent pump-overs to fix the colour of the wine. Before its bottling, Luis Cañas Tinto Joven 2015 was gently filtered and clarified.
Tasting Note
Nice violet colour with a garnet hue at the rim. It displays some primary aromas of red fruit and delicate violet notes. It is joy to drink. Refreshing, full of red fruit and with a good acidity. Great aftertaste of pomegranates and liquorice.
Pairing
Luis Cañas Tinto 2015 is a great summer wine, though it also pairs well with BBQs and cheese platters. Very soft in the mouth, be sure to enjoy it slightly cool.
